Description

Delight in these easy-to-make Date Caramel Coconut Bars that combine the richness of dates and coconut with a touch of dark chocolate.


Ingredients

  • 2 cups shredded coconut
  • 1 cup dates, pitted
  • 1/4 cup coconut oil
  • 1/4 cup maple syrup
  • 1/2 cup dark chocolate chips


Instructions

  1. Combine shredded coconut, coconut oil, and maple syrup in a bowl to form the base.
  2. Press the mixture into a lined baking dish to create an even layer.
  3. Blend the pitted dates with a little water until smooth to create the date caramel and spread it over the coconut layer.
  4. Freeze the dish for about an hour until firm.
  5. Cut into bars once set.
  6. Melt dark chocolate in a microwave or double boiler.
  7. Dip each bar into the melted chocolate and set on parchment paper to cool.
  8. Allow the chocolate to set before serving.
