- 8 large starchy Yukon Gold potatoes
- 2 cups double cream
- 2 cups full-fat milk
- 1 tablespoon garlic (minced)
- 2 sprigs fresh thyme
- Salt and pepper (to taste)
- 1 cup vegetarian cheddar cheese (sprinkle generously)
Instructions
- Preheat your oven to 375°F (190°C).
- Grease a baking dish with butter to prevent sticking.
- Peel and thinly slice the potatoes, about 1/8 inch thick for even cooking.
- Minced the garlic finely to release its flavor.
- Combine the double cream and full-fat milk in a mixing bowl.
- Add the minced garlic, salt, and pepper to the cream mixture.
- Layer half of the sliced potatoes into the greased baking dish.
- Sprinkle with half of the fresh thyme leaves and half of the cheddar cheese.
- Pour half of the cream mixture over the potatoes.
- Repeat the layering with the remaining potatoes, thyme, and cheese.
- Pour the rest of the cream mixture evenly over the top layer.
- Cover the baking dish with aluminum foil.
- Bake in the preheated oven for 45 minutes.
- Remove the foil and bake for an additional 30 minutes, or until potatoes are golden and tender.
- Allow to rest for 10 minutes before serving to let the flavors settle.
Notes
Serve warm for the best flavor and texture. Can be prepared ahead of time and baked later.
