Description

A refreshing salad combining crisp cucumbers, hearty white beans, and fresh dill, perfect for summer gatherings.


Ingredients

  • 2 cups cucumbers, diced
  • 1 can (15 oz) white beans, drained and rinsed
  • 1/4 cup fresh dill, chopped
  • 1/4 cup red onion, diced
  • 1/4 cup apple cider vinegar
  • 1 tablespoon mustard
  • Salt and pepper to taste


Instructions

  1. Combine in a large bowl the diced cucumbers, white beans, fresh dill, and red onion.
  2. Whisk together in a small bowl the apple cider vinegar, mustard, salt, and pepper.
  3. Pour the vinaigrette over the salad and toss gently to combine.
  4. Chill in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.

Notes

Best enjoyed chilled; store leftovers in an airtight container in the fridge for up to 3 days.
