Ingredients

- 2 cups cucumbers, diced
- 1 can (15 oz) white beans, drained and rinsed
- 1/4 cup fresh dill, chopped
- 1/4 cup red onion, diced
- 1/4 cup apple cider vinegar
- 1 tablespoon mustard
- Salt and pepper to taste
Instructions
- Combine in a large bowl the diced cucumbers, white beans, fresh dill, and red onion.
- Whisk together in a small bowl the apple cider vinegar, mustard, salt, and pepper.
- Pour the vinaigrette over the salad and toss gently to combine.
- Chill in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
