Description

A delightful combination of flaky crust and juicy strawberries, perfect for summer gatherings.


Ingredients

Scale
  • 2 cups fresh strawberries, hulled and sliced
  • 1 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 tablespoon butter, diced
  • 1 package refrigerated pie crusts (or homemade pie crust)
  • 1 egg, beaten (for egg wash)
  • 1 teaspoon vanilla extract


Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Toss the sliced strawberries with sugar, cornstarch, lemon juice, and vanilla extract in a bowl.
  3. Roll out one pie crust and fit it into a 9-inch pie pan.
  4. Pour the strawberry mixture into the crust and dot with butter.
  5. Roll out the second pie crust and place it over the filling. Seal and cut slits in the top crust to allow steam to escape.
  6. Brush the top crust with beaten egg.
  7. Bake for 35-45 minutes or until the crust is golden brown.
  8. Let cool before serving.

Notes

Use cold ingredients for a flaky crust. Adjust sweetness based on berries’ flavor.
