Delightful Dulce de Leche Sandwich Cookies (Alfajores) that bring together the sweetness of caramelized milk and soft, crumbly cookies.

- 1 cup unsalted butter, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/2 cup cornstarch
- 1/2 teaspoon salt
- 1 cup dulce de leche
Instructions
- Preheat your oven to 350°F (175°C).
- Cream the butter and powdered sugar together until light and fluffy. Add in the vanilla extract.
- Mix in another bowl the all-purpose flour, cornstarch, and salt together. Gradually add the dry ingredients to the butter mixture, mixing until just combined.
- Take small amounts of dough and roll them into balls, then flatten them slightly. Place on a baking sheet lined with parchment paper.
- Bake for 10-12 minutes or until the edges are lightly golden. Allow to cool completely.
- Spread a layer of dulce de leche on the bottom of one cookie and top with another cookie, creating a sandwich.
- If desired, roll the edges in shredded coconut or sprinkle with powdered sugar before serving.
Notes
Consider sugar substitutes like stevia or monk fruit for a sugar-free version.
