- 2 cups Long Grain White Rice
- 4 cups Chicken Broth
- 2 pieces Boneless, Skinless Chicken Breasts
- 2 tablespoons Olive Oil
- 1 teaspoon Salt
- 1 teaspoon Black Pepper
- 1 cup Greek Yogurt
- 2 cloves Minced Garlic
- 1 cup Grated Cucumber
- 2 tablespoons Dill
- 2 tablespoons Lemon Juice
- 1 teaspoon Oregano
- 1 teaspoon Paprika
- 1 cup Cucumber Substitute (Diced zucchini or bell pepper)
Instructions
- Preheat your oven to 375°F (190°C).
- Grease a large baking dish with olive oil.
- Spread the rice evenly across the bottom of the dish.
- Pour the chicken broth over the rice.
- Season the chicken breasts with salt, black pepper, and paprika.
- Place the seasoned chicken on top of the rice.
- Drizzle the chicken with the remaining olive oil for a crispy finish.
- Cover the baking dish tightly with aluminum foil.
- Bake in the preheated oven for 30 minutes.
- Remove the foil and bake for an additional 10 minutes until the chicken is fully cooked.
- Meanwhile, in a bowl, combine Greek yogurt, minced garlic, grated cucumber, dill, oregano, lemon juice, and a pinch of salt to create the tzatziki sauce.
- Slice the chicken and serve alongside the cooked rice, drizzled with the tzatziki sauce.
Notes
For a dairy-free option, replace Greek yogurt with a dairy-free yogurt alternative.
