Instructions

- Mix together the sourdough starter, sugars, oil, eggs, and vanilla extract in a large bowl until well combined.
- Combine the flour, baking soda, cinnamon, and salt in another bowl. Gradually mix dry ingredients into the wet ingredients until just combined.
- Fold in the grated carrots and any optional ingredients like nuts or raisins.
- Drop spoonfuls of the dough onto the prepared baking sheet, leaving space between each cookie.
- Bake in the preheated oven for 12-15 minutes, or until the edges are golden brown.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
