- 2 cups all-purpose flour
- 1 cup whole wheat flour
- 1 tablespoon sugar
- 1 teaspoon salt
- 1 packet (2 1/4 teaspoons) instant yeast
- 1 cup warm milk (about 110°F)
- 2 tablespoons melted butter
- Cornmeal (for dusting)
- Oil (for cooking)
Instructions
- Combine the all-purpose flour, whole wheat flour, sugar, salt, and instant yeast in a mixing bowl.
- Add the warm milk and melted butter to the dry ingredients and mix until a dough forms.
- Knead the dough for about 5-10 minutes until smooth.
- Place the dough in a greased bowl, cover with a cloth, and let rise in a warm place until doubled in size (about 60 minutes).
- Divide the dough into equal pieces and shape them into rounds.
- Dust a baking sheet with cornmeal and place the rounds on it.
- Cover and let rise again for about 30 minutes.
- Preheat a griddle or skillet over medium heat and lightly oil it.
- Cook the muffins for 7-10 minutes on each side, until golden brown and cooked through.
- Cool on a wire rack before slicing and serving.
Notes
Use fresh yeast for a fluffier texture and better rise. Store in an airtight container for up to 5 days.
