A delightful fusion of traditional Mexican fajitas and comforting pasta, featuring vibrant bell peppers and coconut milk.

Ingredients

Scale
  • 8 oz pasta (like penne or fusilli)
  • 1 tablespoon olive oil
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 can coconut milk (13.5 oz)
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Cook the pasta according to package instructions; drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add the sliced bell pepper and onion, cooking until soft.
  3. Stir in garlic, cumin, and chili powder; cook for another minute.
  4. Pour in the coconut milk and bring to a simmer. Add the cooked pasta to the skillet, tossing to combine.
  5. Season with salt and pepper to taste.

Notes

For a heartier version, consider adding grilled chicken, shrimp, or black beans.
