Description

A delightful and colorful dessert perfect for spring gatherings, featuring a sweet cookie crust topped with cream cheese and fresh fruits.


Ingredients

  • 1 cup gluten-free flour
  • 1/2 cup sugar
  • 1/2 cup butter, softened
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Assorted fresh fruits (strawberries, blueberries, kiwi, etc.)


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine gluten-free flour, sugar, butter, egg, vanilla extract, baking powder, and salt. Mix until a dough forms.
  3. Spread the dough onto a pizza stone or baking sheet to form a pizza crust.
  4. Bake for 12-15 minutes or until golden brown. Let it cool completely.
  5. In another bowl, beat together cream cheese, powdered sugar, and vanilla extract until smooth.
  6. Spread the cream cheese mixture over the cooled crust.
  7. Arrange the assorted fresh fruits on top of the cream cheese layer.
  8. Slice and serve chilled.
