Description

Delicious Funfetti Cinnamon Rolls filled with festive sprinkles and topped with cream cheese frosting.


Ingredients

  • ½ cup warm water (about 110°F)
  • ½ cup whole milk (room temperature)
  • 2 ¼ teaspoons dry active yeast
  • ¼ cup + 1 tablespoon granulated sugar
  • 1 large egg
  • 1 large egg yolk
  • 1 teaspoon kosher salt
  • 4 cups all-purpose flour
  • 5 tablespoons unsalted butter (room temperature)
  • ½ cup confetti sprinkles
  • ⅓ cup unsalted butter (softened)
  • ⅓ cup granulated sugar
  • ⅓ cup dark brown sugar (packed)
  • 1 tablespoon ground cinnamon
  • Pinch kosher salt
  • 4 oz cream cheese
  • ¼ cup unsalted butter (room temperature)
  • 1 ½ cups powdered sugar
  • Pinch kosher salt
  • Additional confetti sprinkles (to garnish)


Instructions

  1. Sprinkle yeast over warm water and milk.
  2. Add 1 tablespoon of sugar and stir to combine.
  3. Let sit for 5-7 minutes to allow the mixture to bubble and activate.
  4. In the bowl of a stand mixer, whisk together yeast mixture, remaining sugar, egg, and egg yolk.
  5. Whisk salt into flour.
  6. Add 2 cups of flour to the mixing bowl.
  7. Use the dough hook attachment to mix together.
  8. Add another 1 cup of flour.
  9. Continue kneading on low speed, adding softened butter 1 tablespoon at a time.
  10. Add remaining cup of flour and knead until the dough is smooth and cleans the sides of the bowl.
  11. Add confetti sprinkles and mix until evenly distributed in the dough.
  12. Transfer dough to a lightly greased bowl.
  13. Cover with plastic wrap and let dough rest at room temperature for about an hour until it’s doubled in volume.
  14. Punch down the risen dough.
  15. Transfer to a lightly floured working surface.
  16. Roll dough into a 20 x 14-inch rectangle.
  17. Spread ⅓ cup softened butter over the dough.
  18. In a bowl, mix together sugar, brown sugar, and cinnamon for the filling.
  19. Distribute cinnamon sugar filling evenly and gently press it into the dough.
  20. Sprinkle a pinch of kosher salt on top.
  21. Roll dough into a log, starting at the longer side.
  22. Slice the log into 12 equal parts.
  23. Place rolls in a greased 9 x 12-inch baking pan.
  24. Cover with plastic wrap and let rolls rest for 30-45 minutes at room temperature to allow them to rise.
  25. Preheat oven to 350°F.
  26. Remove the plastic wrap and bake rolls for 30-35 minutes until golden brown on top and the internal temperature of the rolls hit 185°F.
  27. Allow rolls to rest for 5 minutes to slightly cool.
  28. Beat together cream cheese and butter until smooth for the frosting.
  29. Add sifted powdered sugar and beat until smooth and thickened.
  30. Spread frosting over warm cinnamon rolls.
  31. Top rolls with additional confetti sprinkles, if desired.
