Description

A comforting and flavorful one-pan dish featuring roasted baby potatoes and asparagus, seasoned with garlic and herbs.


Ingredients

  • 1 pound baby potatoes, halved
  • 1 bunch asparagus, trimmed
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Combine in a large bowl the potatoes, asparagus, olive oil, garlic, rosemary, thyme, salt, and pepper.
  3. Toss to coat all the vegetables evenly.
  4. Spread the mixture on a large baking sheet in a single layer.
  5. Roast in the preheated oven for 25-30 minutes, or until the potatoes are tender and golden brown.
