Description

A comforting one-pan dish featuring tender chicken and creamy potatoes in a rich garlic parmesan sauce.


Ingredients

  • 1 lb potatoes (Yukon Gold, cubed)
  • 1.75 lb chicken (cut into 1-inch chunks)
  • 8 oz cream cheese (softened)
  • 4 tsp minced garlic
  • 1/2 cup parmesan cheese
  • 12 oz garlic parmesan sauce
  • 1/2 cup milk
  • 1/2 cup chicken broth
  • 1/2 tsp cracked black pepper
  • 2 cups mozzarella cheese
  • 2 tbsp fresh parsley (chopped)


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Grease a large casserole dish or baking pan.
  3. Wash and peel the potatoes, then cut them into 1-inch cubes.
  4. Place the chicken chunks in a large mixing bowl.
  5. Add cream cheese, minced garlic, parmesan, garlic parmesan sauce, milk, chicken broth, and cracked black pepper to the chicken.
  6. Mix the ingredients together until well combined.
  7. Fold in the cubed potatoes gently to coat.
  8. Transfer the mixture to the greased baking dish.
  9. Sprinkle mozzarella evenly over the top.
  10. Cover with foil and bake for 30 minutes.
  11. Remove the foil and bake for an additional 15-20 minutes, or until golden brown.
  12. Allow the dish to cool for a few minutes.
  13. Garnish with chopped fresh parsley before serving.
