- 1 lb potatoes (Yukon Gold, cubed)
- 1.75 lb chicken (cut into 1-inch chunks)
- 8 oz cream cheese (softened)
- 4 tsp minced garlic
- 1/2 cup parmesan cheese
- 12 oz garlic parmesan sauce
- 1/2 cup milk
- 1/2 cup chicken broth
- 1/2 tsp cracked black pepper
- 2 cups mozzarella cheese
- 2 tbsp fresh parsley (chopped)
Instructions
- Preheat your oven to 375°F (190°C).
- Grease a large casserole dish or baking pan.
- Wash and peel the potatoes, then cut them into 1-inch cubes.
- Place the chicken chunks in a large mixing bowl.
- Add cream cheese, minced garlic, parmesan, garlic parmesan sauce, milk, chicken broth, and cracked black pepper to the chicken.
- Mix the ingredients together until well combined.
- Fold in the cubed potatoes gently to coat.
- Transfer the mixture to the greased baking dish.
- Sprinkle mozzarella evenly over the top.
- Cover with foil and bake for 30 minutes.
- Remove the foil and bake for an additional 15-20 minutes, or until golden brown.
- Allow the dish to cool for a few minutes.
- Garnish with chopped fresh parsley before serving.
