- 2 tbsp extra virgin olive oil

- 0.5 cup parmesan cheese, freshly grated
- 2 tbsp fresh parsley, finely chopped
Instructions
- Preheat your oven to 425°F (220°C).
- Prepare a large baking sheet by lining it with parchment paper for easy cleanup.
- Place the sweet potato cubes in a large bowl.
- Drizzle the extra virgin olive oil over the sweet potatoes.
- Sprinkle in the kosher salt and freshly cracked black pepper.
- Add the minced garlic to the bowl.
- Toss everything together until the sweet potatoes are evenly coated with the oil, salt, pepper, and garlic.
- Spread the sweet potatoes onto the prepared baking sheet in a single layer to ensure even cooking.
- Bake in the preheated oven for about 25-30 minutes or until they are golden and tender, stirring halfway through for even roasting.
- Remove the baking sheet from the oven and immediately sprinkle the freshly grated parmesan cheese over the hot sweet potatoes.
- Return to the oven for an additional 5 minutes, allowing the cheese to melt and become slightly golden.
- Garnish with finely chopped fresh parsley before serving.
Notes
For a vegan option, replace parmesan with nutritional yeast.
