Description

A delightful side dish featuring roasted sweet potatoes coated in garlic and parmesan, perfect for family gatherings and cozy dinners.


Ingredients

  • 2 lbs sweet potatoes, peeled and cut into uniform 1-inch cubes
  • 2 tbsp extra virgin olive oil
  • 1 tsp kosher salt
  • 0.5 tsp black pepper, freshly cracked
  • 3 cloves garlic, minced
  • 0.5 cup parmesan cheese, freshly grated
  • 2 tbsp fresh parsley, finely chopped


Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Prepare a large baking sheet by lining it with parchment paper for easy cleanup.
  3. Place the sweet potato cubes in a large bowl.
  4. Drizzle the extra virgin olive oil over the sweet potatoes.
  5. Sprinkle in the kosher salt and freshly cracked black pepper.
  6. Add the minced garlic to the bowl.
  7. Toss everything together until the sweet potatoes are evenly coated with the oil, salt, pepper, and garlic.
  8. Spread the sweet potatoes onto the prepared baking sheet in a single layer to ensure even cooking.
  9. Bake in the preheated oven for about 25-30 minutes or until they are golden and tender, stirring halfway through for even roasting.
  10. Remove the baking sheet from the oven and immediately sprinkle the freshly grated parmesan cheese over the hot sweet potatoes.
  11. Return to the oven for an additional 5 minutes, allowing the cheese to melt and become slightly golden.
  12. Garnish with finely chopped fresh parsley before serving.

Notes

For a vegan option, replace parmesan with nutritional yeast.
