Description

Ingredients

  • 2 Zucchini, sliced
  • 1 Eggplant, diced
  • 1 Red onion, sliced
  • 3 tablespoons Olive oil

  • 2 tablespoons Herbs (like thyme or rosemary)


Instructions

  1. Preheat the grill to medium-high heat.

  3. Combine the vegetables with olive oil, salt, pepper, garlic powder, and herbs in a bowl.
  4. Toss to coat evenly.
