- 2 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup brown sugar, packed
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon peppermint extract
- 2 cups green candy melts or dye
- 1 cup chocolate chips
- 1/2 cup chopped nuts (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Line a baking sheet with parchment paper.
- Whisk together the flour, baking soda, and salt in a bowl. Set aside.
- Cream together the softened butter, granulated sugar, and brown sugar in a large mixing bowl until light and fluffy.
- Add the eggs, one at a time, mixing well after each addition.
- Stir in the vanilla and peppermint extract until well combined.
- Gradually add the flour mixture to the wet ingredients, mixing until just combined.
- Melt the green candy melts in a microwave-safe bowl until smooth. Allow to cool slightly.
- Fold the melted candy into the cookie dough until evenly mixed.
- Gently fold in the chocolate chips and nuts (if using) until distributed throughout the dough.
- Scoop tablespoon-sized portions of dough onto the prepared baking sheet, leaving enough space between each cookie.
- Bake for 10-12 minutes, or until the edges are lightly golden but the centers remain soft.
- Remove the cookies from the oven and allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
Chill your dough for at least 30 minutes for thicker cookies. Use quality green candy melts for the best color and flavor.
