- 3 ripe bananas
- 1/3 cup honey
- 1/4 cup melted coconut oil
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup all-purpose flour
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan.
- Mash the ripe bananas with a fork until smooth.
- Stir in the honey, melted coconut oil, and vanilla extract until well combined.
- Sprinkle the baking soda and salt over the mixture and mix in.
- Add the flour and stir until just incorporated. Do not overmix.
- Pour the batter into the prepared loaf pan.
- Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for a few minutes before transferring it to a wire rack to cool completely.
Notes
For a lower sugar option, consider using stevia, monk fruit, or allulose instead of honey.
