Description

Ingredients

  • 100 grams sourdough starter (1/2 cup)
  • 100 grams honey (scant 1/3 cup)
  • 330 grams water (1 1/4 cups + 2 Tablespoons)
  • 500 grams bread flour (3 1/2 cups)
  • 12 grams salt (2 teaspoons)
  • 90 grams walnuts (3/4 cup)
  • 4 grams cinnamon (2 teaspoons)


Instructions

  1. Make the dough: In a large mixing bowl, combine the sourdough starter, honey, and water. Stir until well mixed.
  2. Add the bread flour and salt into the mixture. Use a spatula or your hands to bring everything together until no dry flour remains.
  3. Incorporate the walnuts and cinnamon into the dough, mixing until uniformly distributed.
  4. Knead the dough by hand or with a mixer for about 5 minutes until smooth and elastic.
  5. Cover the bowl with a damp cloth and let the dough rest for about 30 minutes.
  6. Stretch and fold: Over the next two hours, perform a series of stretches and folds every 30 minutes.
  7. Continue with bulk fermentation: Allow the dough to rise at room temperature until it has doubled in size, usually 4 to 6 hours.
  8. Pre-shape the dough by gently turning it out onto a lightly floured surface and shaping it into a round ball. Let it rest for 20 minutes.
  9. Final shape: Flip the dough seam-side up and shape it into your choice of a round or batard, tucking the edges underneath for a taut surface.
  10. Cold proof: Transfer the shaped dough into a well-floured proofing basket. Cover it and refrigerate for 12 to 24 hours.
  11. Score the dough: Preheat your oven to 450°F (232°C). When ready to bake, carefully transfer the dough onto a baking surface and score the top with a sharp blade.
  12. Bake: Place the dough in the preheated oven and bake for about 30-35 minutes, or until the bread is golden brown and sounds hollow when tapped.

Notes
