- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 tablespoon baking powder
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup peach jam
- Yellow and red food coloring
- Powdered sugar for dusting
- Mint leaves for garnish
Instructions
- Preheat the oven to 350°F (175°C). In a bowl, cream together the butter and sugar until light and fluffy.
- Add the eggs, vanilla, and mix well.
- In another bowl, whisk together flour, baking powder, and salt. Gradually mix in the dry ingredients to the wet mixture to form a dough.
- Roll the dough into small balls and place them on a baking sheet lined with parchment paper.
- Bake for 12-15 minutes. Allow to cool.
- Once cooled, cut a small hole in the center of each cookie and fill with peach jam.
- For decoration, tint some powdered sugar with yellow and red food coloring and dust over the cookies to resemble peaches.
- Garnish with mint leaves before serving.
Notes
Chill the dough if too sticky. Experiment with different jam flavors for variety.
