Description

Delightful Italian Peach Cookies with a buttery texture and luscious peach jam center, perfect for any occasion.


Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 tablespoon baking powder
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup peach jam
  • Yellow and red food coloring
  • Powdered sugar for dusting
  • Mint leaves for garnish


Instructions

  1. Preheat the oven to 350°F (175°C). In a bowl, cream together the butter and sugar until light and fluffy.
  2. Add the eggs, vanilla, and mix well.
  3. In another bowl, whisk together flour, baking powder, and salt. Gradually mix in the dry ingredients to the wet mixture to form a dough.
  4. Roll the dough into small balls and place them on a baking sheet lined with parchment paper.
  5. Bake for 12-15 minutes. Allow to cool.
  6. Once cooled, cut a small hole in the center of each cookie and fill with peach jam.
  7. For decoration, tint some powdered sugar with yellow and red food coloring and dust over the cookies to resemble peaches.
  8. Garnish with mint leaves before serving.

Notes

Chill the dough if too sticky. Experiment with different jam flavors for variety.
