Description
A delightful fusion of sweet donuts and fluffy focaccia, filled with raspberry preserves and topped with icing, perfect for brunch.
Ingredients
Scale
- 1.75 cups Warm Water (105-115°F)
- 2 tsp Sugar (optional if using instant yeast)
- 1 packet Active Dry Yeast
- 2 cups Bread Flour
- 2 cups All-Purpose Flour
- 2 tsp Salt
- 6 tbsp Olive Oil (divided)
- 1 jar Raspberry Preserves (or other jams)
- 2 cups Confectioners’ Sugar
- 2-4 tbsp Whole Milk (as needed)
Instructions
- Warm 1.75 cups of water in a microwave until it reaches 105-115°F.
- Dissolve 2 tsp of sugar in the warm water, if using instant yeast.
- Sprinkle 1 packet of active dry yeast over the warm water and let it sit for about 5-10 minutes until frothy.
- Combine 2 cups of bread flour and 2 cups of all-purpose flour into a large mixing bowl.
- Add 2 tsp of salt to the flour mixture and whisk together.
- Make a well in the center of the flour mixture and pour in the yeast mixture.
- Add 4 tbsp of olive oil into the well and stir until combined.
- Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
- Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1-2 hours, or until doubled in size.
- Preheat your oven to 375°F.
- Punch down the risen dough and transfer it to a greased baking sheet.
- Spread the dough into a rectangle, about 1 inch thick.
- Make dimples across the surface of the dough using your fingers.
- Spread the raspberry preserves evenly across the dimples.
- Drizzle 2 tbsp of olive oil over the top of the dough.
- Bake for 25-30 minutes, or until golden brown.
- Allow the focaccia to cool slightly once removed from the oven.
- Whisk together 2 cups of confectioners’ sugar and 2-4 tbsp of whole milk until smooth.
- Drizzle the icing over the warm focaccia and let it set before slicing.
Notes
Experiment with different jams for unique flavors and store any leftovers in an airtight container.
