Description

Ingredients

  • 1 lb chicken breast, diced
  • 1 lb shrimp, peeled and deveined
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 can diced tomatoes (14.5 oz)
  • 1 cup heavy cream
  • 2 cups chicken broth
  • 2 tbsp Cajun seasoning
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Green onions for garnish


Instructions

  1. Cook the pasta according to package instructions; drain and set aside.
  2. Heat olive oil over medium heat in a large skillet. Add diced chicken and cook until browned.
  3. Add the chopped onion, bell pepper, and garlic; sauté until vegetables are tender.
  4. Stir in shrimp and cook until they turn pink.
  5. Add diced tomatoes, chicken broth, and Cajun seasoning. Bring to a simmer.
  6. Stir in heavy cream and let the mixture simmer for a few more minutes to thicken.
  7. Combine the cooked pasta with the sauce; stir until well coated.
  8. Season with salt and pepper to taste; garnish with green onions before serving.
