- 1 lb chicken breast, diced
- 1 lb shrimp, peeled and deveined
- 1 bell pepper, chopped
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 can diced tomatoes (14.5 oz)
- 1 cup heavy cream
- 2 cups chicken broth
- 2 tbsp Cajun seasoning
- Salt and pepper to taste
- 2 tbsp olive oil
- Green onions for garnish
Instructions
- Cook the pasta according to package instructions; drain and set aside.
- Heat olive oil over medium heat in a large skillet. Add diced chicken and cook until browned.
- Add the chopped onion, bell pepper, and garlic; sauté until vegetables are tender.
- Stir in shrimp and cook until they turn pink.
- Add diced tomatoes, chicken broth, and Cajun seasoning. Bring to a simmer.
- Stir in heavy cream and let the mixture simmer for a few more minutes to thicken.
- Combine the cooked pasta with the sauce; stir until well coated.
- Season with salt and pepper to taste; garnish with green onions before serving.
