Description
A refreshing and guilt-free twist on the classic Key lime pie, made with creamy Greek yogurt and topped with graham crackers and toasted coconut.

- 2.5 cups Greek yogurt (plain, non-fat or low-fat)
- 3.5 tbsp key lime juice
- 2 tbsp powdered swerve (or substitute with 1 tbsp honey)
- 1 teaspoon vanilla extract
- 1 tablespoon lime zest
- 1/3 cup crushed gluten-free graham crackers
- 1/4 cup toasted coconut (unsweetened)
- 1 scoop vanilla protein powder
Instructions
- Combine the Greek yogurt, key lime juice, protein powder, lime zest, powdered swerve, and vanilla extract in a medium mixing bowl. Mix until smooth and well combined.
- Line a baking sheet with parchment paper or a silicone baking mat.
- Spread the yogurt mixture evenly over the prepared baking sheet, creating a thin, even layer.
- Sprinkle the crushed graham crackers, toasted coconut, and lime zest evenly over the yogurt layer.
- Place the baking sheet in the freezer for at least 120-180 minutes, or until the yogurt mixture is fully frozen and set.
- Remove the baking sheet from the freezer.
- Lift the parchment paper or silicone mat from the baking sheet and break the frozen yogurt bark into pieces.
- Enjoy immediately or store the bark pieces in an airtight container in the freezer for up to 14 days.
