Description

A refreshing and creamy pasta salad featuring vibrant asparagus and zesty lemon, perfect for summer gatherings.


Ingredients

  • 8 oz pasta (fusilli or rotini)
  • 1 bunch asparagus, trimmed and cut into 1-inch pieces
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, diced
  • 1/4 cup fresh lemon juice
  • 1/2 cup mayonnaise
  • 1/4 cup Greek yogurt
  • Salt and pepper to taste
  • Fresh parsley for garnish


Instructions

  1. Cook the pasta according to package instructions. Drain and rinse under cold water.
  2. In a large pot of boiling water, blanch the asparagus for 2-3 minutes until bright green and tender-crisp. Drain and rinse under cold water.
  3. In a large bowl, combine the pasta, asparagus, cherry tomatoes, and red onion.
  4. In a small bowl, mix together the lemon juice, mayonnaise, Greek yogurt, salt, and pepper.
  5. Pour the dressing over the pasta salad and toss to coat.
  6. Chill in the refrigerator for at least 30 minutes before serving.
  7. Garnish with fresh parsley before serving.
