Description

A refreshing and nutritious Lemon Blueberry Chia Pudding that combines the tangy zest of lemons with the sweetness of blueberries.


Ingredients

Scale
  • 1 cup non-dairy milk of choice
  • 2-3 tablespoons fresh squeezed lemon juice
  • ½ cup frozen or fresh blueberries
  • 2 pitted medjool dates or 2-3 tablespoons sweetener of choice
  • ¼ cup chia seeds
  • 1 teaspoon lemon zest, optional for garnish
  • Fresh blueberries and vegan yogurt or other toppings for serving


Instructions

  1. Combine the non-dairy milk, lemon juice, blueberries, and pitted medjool dates (or sweetener) in a blender.
  2. Blend until smooth and combined.
  3. Taste the mixture, and adjust sweetness if needed.
  4. Transfer the mixture into 1 or 2 jars or containers.
  5. Mix in the chia seeds thoroughly.
  6. Refrigerate your lemon blueberry chia pudding for at least 1-2 hours.
  7. Divide the chia pudding between bowls if needed.
  8. Serve with your favorite toppings such as fresh blueberries, granola, or nut butter.

Notes

Experiment with different non-dairy milks and add extra lemon zest for more flavor.
