Description

Ingredients

  • 1 tablespoon lemon zest
  • 1 3/4 cup all-purpose flour
  • 1 3/4 teaspoon baking powder

  • 1/4 teaspoon salt
  • 1 3/4 cup milk
  • 1 tablespoon lemon juice
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 stick unsalted butter (melted and slightly cooled)
  • 1 cup blueberries
  • Nonstick cooking spray (oil or melted butter)
  • Maple syrup
  • Powdered sugar
  • Whipped cream


Instructions

  1. Preheat the waffle iron according to the manufacturer’s instructions.
  2. Combine the sugar and lemon zest in a large bowl.
  3. Rub the sugar mixture with your fingertips to release the lemon oils.
  4. Add the flour, baking powder, baking soda, and salt to the same bowl. Set aside.
  5. Whisk together the milk, lemon juice, eggs, and vanilla in a medium bowl.
  6. Whisk the wet mixture into the flour mixture until a batter is formed.
  7. Whisk in the melted butter until just incorporated.
  8. Fold in the blueberries with a spatula until combined.
  9. Spray both sides of the preheated waffle iron with nonstick cooking spray.
  10. Pour some of the batter onto the greased waffle iron.
  11. Close the lid and cook until the waffles are a deep golden brown and slightly crisp, about 3-5 minutes.
  12. Repeat with the remaining batter.
  13. Serve with maple syrup, powdered sugar, or whipped cream.

Notes

Use fresh blueberries for the best flavor and texture. Don’t overmix the batter; a few lumps are fine for fluffy waffles.
