- 1 tablespoon lemon zest
- 1 3/4 cup all-purpose flour
- 1 3/4 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1 3/4 cup milk
- 1 tablespoon lemon juice
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 stick unsalted butter (melted and slightly cooled)
- 1 cup blueberries
- Nonstick cooking spray (oil or melted butter)
- Maple syrup
- Powdered sugar
- Whipped cream
Instructions
- Preheat the waffle iron according to the manufacturer’s instructions.
- Combine the sugar and lemon zest in a large bowl.
- Rub the sugar mixture with your fingertips to release the lemon oils.
- Add the flour, baking powder, baking soda, and salt to the same bowl. Set aside.
- Whisk together the milk, lemon juice, eggs, and vanilla in a medium bowl.
- Whisk the wet mixture into the flour mixture until a batter is formed.
- Whisk in the melted butter until just incorporated.
- Fold in the blueberries with a spatula until combined.
- Spray both sides of the preheated waffle iron with nonstick cooking spray.
- Pour some of the batter onto the greased waffle iron.
- Close the lid and cook until the waffles are a deep golden brown and slightly crisp, about 3-5 minutes.
- Repeat with the remaining batter.
- Serve with maple syrup, powdered sugar, or whipped cream.
Notes
Use fresh blueberries for the best flavor and texture. Don’t overmix the batter; a few lumps are fine for fluffy waffles.
