Delicious and tangy lemon crumb bars with a buttery crust and crumbly topping.
Ingredients

- 1 cup all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/4 cup granulated sugar
- 1/4 teaspoon salt
- 1/2 cup granulated sugar (for filling)
- 2 large eggs
- 1/4 cup fresh lemon juice
- 1 tablespoon lemon zest
- 1/4 teaspoon baking powder
- Powdered sugar for dusting
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking pan.
- In a mixing bowl, combine flour, softened butter, sugar, and salt to form a crumbly mixture.
- Press half of the crumb mixture into the bottom of the prepared pan to form the crust.
- In another bowl, whisk together the sugar, eggs, lemon juice, lemon zest, and baking powder until smooth.
- Pour the lemon filling over the crust in the pan.
- Sprinkle the remaining crumb mixture over the lemon filling.
- Bake for 25-30 minutes or until the top is golden brown.
- Allow to cool completely before cutting into bars.
- Dust with powdered sugar before serving.
