Description

Delicious and tangy lemon crumb bars with a buttery crust and crumbly topping.


Ingredients

Scale
  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1/2 cup granulated sugar (for filling)
  • 2 large eggs
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/4 teaspoon baking powder
  • Powdered sugar for dusting


Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking pan.
  2. In a mixing bowl, combine flour, softened butter, sugar, and salt to form a crumbly mixture.
  3. Press half of the crumb mixture into the bottom of the prepared pan to form the crust.
  4. In another bowl, whisk together the sugar, eggs, lemon juice, lemon zest, and baking powder until smooth.
  5. Pour the lemon filling over the crust in the pan.
  6. Sprinkle the remaining crumb mixture over the lemon filling.
  7. Bake for 25-30 minutes or until the top is golden brown.
  8. Allow to cool completely before cutting into bars.
  9. Dust with powdered sugar before serving.
