- 1 medium onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cloves garlic, minced
- 6 cups vegetable broth
- 1 cup lemon juice
- 1 teaspoon turmeric

- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Rinse the lentils under cold water and set aside.
- In a large pot, sauté the onions, carrots, and celery in a bit of olive oil until softened.
- Add the garlic and cook for another minute.
- Stir in the lentils, vegetable broth, turmeric, cumin, salt, and pepper.
- Bring to a boil, then reduce heat and let simmer for about 25-30 minutes, or until lentils are soft.
- Mix in the lemon juice and adjust seasoning if necessary.
- Serve hot, garnished with fresh parsley.
