Description

Ingredients

  • 1/2 cup fresh lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. Whisk together the olive oil and sugar in a large bowl until well combined.
  3. Add the eggs, Greek yogurt, lemon juice, and lemon zest, mixing until smooth.
  4. Combine the flour, baking powder, baking soda, and salt in another bowl.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Pour the batter into the prepared cake pan and smooth the top.
  7. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Serve with coffee or tea.
