- 1 can (15 oz) white beans, drained and rinsed
- 1 lemon (juice and zest)
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Cook the pasta according to package instructions. Drain and set aside.
- Combine in a blender or food processor the white beans, lemon juice, lemon zest, and garlic. Blend until smooth.
- Heat the olive oil in a large skillet over medium heat. Add the blended mixture and stir well.
- Toss the cooked pasta into the skillet and combine well. Season with salt and pepper to taste.
- Serve warm, garnished with fresh parsley if desired.
Notes
For a healthier option, use whole grain or legume-based pasta. Add fresh greens for extra nutrition.
