Description

A light and satisfying pasta dish combining the creaminess of white beans with the zest of lemon, inspired by Mediterranean flavors.


Ingredients

  • 8 oz pasta (your choice)
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 lemon (juice and zest)
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)


Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. Combine in a blender or food processor the white beans, lemon juice, lemon zest, and garlic. Blend until smooth.
  3. Heat the olive oil in a large skillet over medium heat. Add the blended mixture and stir well.
  4. Toss the cooked pasta into the skillet and combine well. Season with salt and pepper to taste.
  5. Serve warm, garnished with fresh parsley if desired.
