Instructions
- Prepare the pan: Grease and flour a madeleine pan to prevent sticking. Preheat oven to 375°F (190°C).
- Mix dry ingredients: In a bowl, whisk together flour, baking powder, and salt. Set aside.
- Whisk eggs and sugar: In a separate bowl, beat the eggs and sugar together until pale and slightly thickened (about 3-5 minutes).
- Add flavorings: Stir in vanilla extract and lemon zest.
- Incorporate dry ingredients: Gently fold in the dry ingredients, being careful not to overmix.
- Add butter: Gradually fold in the melted butter until fully combined.
- Chill the batter: Cover and refrigerate for at least 30 minutes to allow the batter to rest (optional but recommended).
- Bake: Spoon batter into the prepared madeleine pan, filling each mold about 3/4 full. Bake for 9-10 minutes until edges are golden brown and the centers spring back when lightly pressed.
- Cool and serve: Let the madeleines cool in the pan for a minute before transferring them to a wire rack. Dust with powdered sugar if desired.
