Description
Delicate macarons infused with lime and tequila, inspired by the classic margarita cocktail.
Ingredients

- 120 g almond flour
- 120 g powdered sugar
- 100 g egg whites (approx. 3 large eggs) (room temperature)
- 100 g granulated sugar
- Green gel food coloring (do NOT use liquid coloring)
- 57 g unsalted butter (room temperature)
- 1 tsp lime zest
- 240 g powdered sugar
- 25 g tequila
- 2 tsp lime juice
- Pinch of salt
Instructions
- Preheat the oven to 150°C (300°F) and line a baking sheet with parchment paper.
- Sift together the almond flour and powdered sugar into a bowl.
- Whip the egg whites in a clean bowl until foamy.
- Gradually add the granulated sugar while continuously whisking until stiff peaks form.
- Add a few drops of green gel food coloring and gently fold until incorporated.
- Fold the almond flour mixture into the egg whites gently until the batter flows like lava.
- Transfer the batter to a piping bag fitted with a round tip.
- Pipe circles onto the prepared baking sheet, leaving space between them.
- Tap the baking sheet against the counter to eliminate air bubbles.
- Let the macarons sit at room temperature for 30 minutes until a skin forms.
- Bake in the preheated oven for 12-15 minutes, or until the macarons easily lift off the parchment paper.
- Allow the macarons to cool completely on the baking sheet.
Notes
Sift the almond flour and powdered sugar multiple times for a smooth batter. Use a kitchen scale for precise measurements.
