Description
This delightful Marry Me Tofu combines crispy pan-fried tofu with a rich, creamy sauce, inspired by Mediterranean flavors that enchant everyone who tastes it.

- 16 ounces super firm tofu (or extra-firm, pressed well)
- 4 tablespoons cornstarch
- 2 tablespoons nutritional yeast
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
- 3 tablespoons avocado oil (or other high-heat safe oil)
- 5 cloves garlic (minced)
- 1/2 cup sun-dried tomatoes (chopped)
- 1/2 teaspoon oregano
- 1/2 teaspoon red chili flakes
- 1 teaspoon salt (more or less to taste)
- 1/4 teaspoon ground black pepper
- 1 cup vegetable broth
- 1 tablespoon tomato paste
- 1 cup Cashew Cream (or other vegan cream)
- 2 cups baby spinach (sliced or chopped)
- 4-5 fresh basil leaves (chopped)
- 1/2 cup Vegan Parmesan (optional)
Instructions
- Press the tofu to remove excess moisture, if using extra-firm tofu.
- Cut the pressed tofu into cubes or triangles, as desired.
- Toss the tofu in cornstarch, nutritional yeast, salt, and black pepper until evenly coated.
- Heat the avocado oil in a pan over medium-high heat.
- Add the coated tofu to the hot pan in a single layer.
- Fry the tofu for about 4-5 minutes on each side until golden brown and crispy.
- Remove the tofu from the pan and set it aside on a paper towel-lined plate to absorb excess oil.
- In the same pan, add minced garlic and sauté until fragrant, about 1 minute.
- Stir in the chopped sun-dried tomatoes, oregano, and red chili flakes.
- Pour in the vegetable broth and add the tomato paste, stirring until mixed well.
- Simmer the sauce for about 5 minutes until it thickens slightly.
- Add the Cashew Cream, baby spinach, chopped basil leaves, and adjust salt and pepper to taste.
- Incorporate the crispy tofu back into the sauce gently.
- Allow everything to meld for another 2-3 minutes over low heat.
Notes
Store leftovers in an airtight container for up to 3-4 days. Can be frozen for about a month. Reheat in a pan over medium heat, adding a splash of water or broth to revive the sauce.
