Description

A visually delightful and delicious dessert combining French crepes with Japanese matcha, layered with cream and strawberries.

Ingredients

Scale
  • 1 cup all-purpose flour
  • 2 large eggs
  • 2 cups milk
  • 2 tablespoons matcha green tea powder
  • 2 tablespoons sugar
  • 1/4 teaspoon salt
  • 2 tablespoons melted butter
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • Fresh strawberries
  • Extra matcha powder for dusting

Instructions

  1. Whisk together flour, eggs, milk, matcha powder, sugar, and salt until smooth.
  2. Heat a non-stick skillet over medium heat and lightly grease it with butter.
  3. Pour about 1/4 cup of the batter into the skillet, swirling to coat the bottom evenly.
  4. Cook for 1-2 minutes until the edges lift, then flip and cook for another minute.
  5. Repeat until all batter is used, stacking the cooked crepes on a plate.
  6. Whip the heavy cream and powdered sugar in another bowl until soft peaks form.
  7. Layer a crepe, spread matcha cream on top, add sliced strawberries, then add another crepe.
  8. Repeat layering until all crepes are stacked.
  9. Dust the top with matcha powder and garnish with strawberries. Serve and enjoy!

Notes

For diabetes, consider using natural sweeteners like stevia. Let the batter rest for at least 30 minutes for better texture.
