Description

A delightful dish of baked cod infused with vibrant Mediterranean flavors from olives, tomatoes, and lemon.


Ingredients

  • Cod Fillets: 4 fillets (6 oz each)
  • Olive Oil: 3 tablespoons
  • Cherry Tomatoes: 1 cup, halved
  • Kalamata Olives: 1/2 cup, pitted
  • Garlic Cloves: 3, minced
  • Lemon Slices: 1 lemon, thinly sliced
  • Fresh Parsley: 2 tablespoons, chopped
  • Dried Oregano: 1 teaspoon
  • Salt: 1 teaspoon
  • Black Pepper: 1/2 teaspoon


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Mix olive oil, minced garlic, dried oregano, salt, and black pepper in a bowl.
  3. Grease the baking dish lightly with a teaspoon of olive oil.
  4. Place cod fillets in the dish, surrounding them with cherry tomatoes, olives, and lemon slices.
  5. Drizzle the olive oil mixture evenly over everything in the dish.
  6. Bake in the preheated oven for 20–25 minutes until cod is opaque and flakes easily with a fork.
  7. Sprinkle fresh parsley over the top for a pop of color and aroma.
  8. Plate each fillet with a generous portion of tomatoes, olives, and lemon slices, and serve immediately.
