Ingredients
- Cod Fillets: 4 fillets (6 oz each)
- Olive Oil: 3 tablespoons
- Cherry Tomatoes: 1 cup, halved
- Kalamata Olives: 1/2 cup, pitted
- Garlic Cloves: 3, minced
- Lemon Slices: 1 lemon, thinly sliced
- Fresh Parsley: 2 tablespoons, chopped
- Dried Oregano: 1 teaspoon
- Salt: 1 teaspoon
- Black Pepper: 1/2 teaspoon
Instructions
- Preheat your oven to 400°F (200°C).
- Mix olive oil, minced garlic, dried oregano, salt, and black pepper in a bowl.
- Grease the baking dish lightly with a teaspoon of olive oil.
- Place cod fillets in the dish, surrounding them with cherry tomatoes, olives, and lemon slices.
- Drizzle the olive oil mixture evenly over everything in the dish.
- Bake in the preheated oven for 20–25 minutes until cod is opaque and flakes easily with a fork.
- Sprinkle fresh parsley over the top for a pop of color and aroma.
- Plate each fillet with a generous portion of tomatoes, olives, and lemon slices, and serve immediately.
