Ingredients

- 1 head cauliflower, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 1 carrot, diced
- 2 celery stalks, diced
- 4 cups vegetable broth
- 1 teaspoon dried oregano
- 1 teaspoon ground cumin
- Salt and pepper to taste
- Olive oil for cooking
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, garlic, carrot, and celery. Sauté until softened.
- Stir in the chopped cauliflower, vegetable broth, oregano, cumin, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for about 20 minutes until the cauliflower is tender.
- Use an immersion blender to puree the soup until smooth.
- Serve hot, garnished with fresh parsley.
