- 4 boneless, skinless chicken breasts
- 2 cups cherry tomatoes
- 1 cup Kalamata olives
- 1 red onion, sliced
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley for garnish
Instructions
- Preheat oven to 400°F (200°C).
- Combine in a large bowl the chicken breasts, cherry tomatoes, olives, red onion, and garlic.
- Drizzle with olive oil, and sprinkle with oregano, basil, salt, and pepper.
- Toss everything until the chicken is well coated.
- Transfer the mixture to a baking dish.
- Bake for 25-30 minutes, or until the chicken is cooked through.
- Garnish with fresh parsley before serving.
Notes
For added flavor, marinate the chicken in olive oil and herbs for an hour before baking.
