Description

A delightful Mediterranean Chicken recipe featuring tender chicken breasts, vibrant cherry tomatoes, and Kalamata olives, perfect for weeknight dinners.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 cups cherry tomatoes
  • 1 cup Kalamata olives
  • 1 red onion, sliced
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Combine in a large bowl the chicken breasts, cherry tomatoes, olives, red onion, and garlic.
  3. Drizzle with olive oil, and sprinkle with oregano, basil, salt, and pepper.
  4. Toss everything until the chicken is well coated.
  5. Transfer the mixture to a baking dish.
  6. Bake for 25-30 minutes, or until the chicken is cooked through.
  7. Garnish with fresh parsley before serving.

Notes

For added flavor, marinate the chicken in olive oil and herbs for an hour before baking.
