Description

Delight in these warm, flaky empanadas filled with spicy chorizo and melted cheese, perfect for gatherings or a cozy night in.


Ingredients

  • Empanada dough
  • Chorizo sausage
  • Queso (Mexican cheese)
  • Onion (chopped)
  • Garlic (minced)
  • Chili powder
  • Cilantro (chopped)
  • Egg (for egg wash)
  • Salt
  • Pepper


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the chorizo in a skillet over medium heat until browned.
  3. Add the chopped onion and minced garlic, and cook until softened.
  4. Remove from heat and stir in queso, chili powder, cilantro, salt, and pepper.
  5. Roll out the empanada dough and cut into circles.
  6. Place a spoonful of the chorizo mixture in the center of each circle.
  7. Fold the dough over and seal the edges with a fork.
  8. Brush the tops with beaten egg.
  9. Bake for about 20-25 minutes, or until golden brown.
  10. Let cool slightly before serving and enjoy!
