Ingredients
- Empanada dough
- Chorizo sausage
- Queso (Mexican cheese)
- Onion (chopped)
- Garlic (minced)
- Chili powder
- Cilantro (chopped)
- Egg (for egg wash)
- Salt
- Pepper
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the chorizo in a skillet over medium heat until browned.
- Add the chopped onion and minced garlic, and cook until softened.
- Remove from heat and stir in queso, chili powder, cilantro, salt, and pepper.
- Roll out the empanada dough and cut into circles.
- Place a spoonful of the chorizo mixture in the center of each circle.
- Fold the dough over and seal the edges with a fork.
- Brush the tops with beaten egg.
- Bake for about 20-25 minutes, or until golden brown.
- Let cool slightly before serving and enjoy!
Notes
For a vegetarian option, substitute chorizo with vegetables or beans. You can also freeze uncooked empanadas for later.
