Ingredients

  • 1/2 cup uncooked rice
  • 1 egg
  • 1/2 onion, chopped
  • 2 cloves garlic, minced

  • 2 celery stalks, sliced
  • 1 can diced tomatoes
  • 6 cups beef broth
  • 2 tablespoons fresh cilantro, chopped
  • 1 tablespoon olive oil

Instructions

  3. Pour in the beef broth and bring to a simmer. Add the meatballs and cook until they are cooked through, about 15 minutes.
  4. Stir in diced tomatoes and cilantro. Cook for an additional 5 minutes.
