- 1 pie crust
- 4 oz smoked salmon, chopped
- 3 eggs
- 1 cup heavy cream
- 1/2 cup grated cheese (like Gruyère or cheddar)
- 1/4 cup chopped fresh dill
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Roll out the pie crust and cut it into small circles to fit into a mini muffin tin. Place the circles into the tin.
- Whisk together the eggs and heavy cream in a bowl.
- Add the smoked salmon, cheese, dill, salt, and pepper to the egg mixture.
- Pour the mixture into each mini crust, filling them about 3/4 full.
- Bake for 15-20 minutes or until the quiches are set and golden.
- Let them cool slightly before serving.
Notes
These quiches can be made in advance and frozen for a quick meal. Experiment with different cheeses for unique flavors.
