A creamy Middle Eastern dip made from roasted zucchini, tahini, and garlic, perfect for gatherings and casual meals.
Ingredients

- 2 medium zucchinis
- 1/2 cup tahini
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 lemon, juiced
- Salt to taste
- Fresh parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C). Cut the zucchinis in half and roast them for about 20 minutes until tender.
- Allow them to cool and scoop out the flesh into a bowl.
- In a food processor, combine the roasted zucchini, tahini, garlic, olive oil, lemon juice, and salt. Blend until smooth and creamy.
- Taste and adjust seasoning if necessary.
- Transfer to a serving bowl and garnish with parsley. Serve with pita bread or vegetables.
Notes
For an extra zing, add a pinch of cayenne or smoked paprika. Store in an airtight container in the fridge for up to 4 days.
