Description

A creamy Middle Eastern dip made from roasted zucchini, tahini, and garlic, perfect for gatherings and casual meals.


Ingredients

Scale
  • 2 medium zucchinis
  • 1/2 cup tahini
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 lemon, juiced
  • Salt to taste
  • Fresh parsley for garnish


Instructions

  1. Preheat the oven to 400°F (200°C). Cut the zucchinis in half and roast them for about 20 minutes until tender.
  2. Allow them to cool and scoop out the flesh into a bowl.
  3. In a food processor, combine the roasted zucchini, tahini, garlic, olive oil, lemon juice, and salt. Blend until smooth and creamy.
  4. Taste and adjust seasoning if necessary.
  5. Transfer to a serving bowl and garnish with parsley. Serve with pita bread or vegetables.

Notes

For an extra zing, add a pinch of cayenne or smoked paprika. Store in an airtight container in the fridge for up to 4 days.
