  • 1/2 teaspoon cinnamon
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3 cups quick oats
  • 3/4 cup unsalted butter (168 grams) (softened)
  • 2 ounces cream cheese (57 grams) (full-fat, brick style)
  • 3-4 cups powdered sugar (330-440 grams)
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 tablespoon cream (if needed)


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease your baking sheets or line them with parchment paper.
  3. Cream together 1 cup of unsalted butter with 1 cup of brown sugar and 1/2 cup of granulated sugar until light and fluffy.
  4. Add 1 tablespoon of molasses and 2 teaspoons of vanilla extract to the mixture. Beat well to combine.
  5. Add 2 large eggs, one at a time, mixing thoroughly after each addition.
  6. Whisk together 2 cups of all-purpose flour, 1/2 teaspoon of cinnamon, 1 teaspoon of baking soda, and 1/4 teaspoon of salt in a separate bowl.
  7. Gradually add the dry ingredients to the wet mixture, mixing just until combined.
  8. Fold in 3 cups of quick oats until evenly distributed.
  9. Drop rounded tablespoons of dough onto prepared baking sheets, leaving space for spreading.
  10. Bake in the preheated oven for 10-12 minutes, or until lightly golden on the edges.
  11. Remove from the oven and allow cookies to cool completely on a wire rack.
  12. Beat together 3/4 cup of softened unsalted butter and 2 ounces of cream cheese until smooth in another bowl.
  13. Gradually add 3-4 cups of powdered sugar, 1 teaspoon of vanilla extract, and 1/4 teaspoon of salt. Mix until smooth, adding 1 tablespoon of cream if needed for spreading.
  14. Spread a generous portion of the frosting on the flat side of one cookie once the cookies are completely cooled.
  15. Top with another cookie, pressing down gently to create a sandwich.
