Instructions
- Preheat your oven to 350°F (175°C).
- Grease your baking sheets or line them with parchment paper.
- Cream together 1 cup of unsalted butter with 1 cup of brown sugar and 1/2 cup of granulated sugar until light and fluffy.
- Add 1 tablespoon of molasses and 2 teaspoons of vanilla extract to the mixture. Beat well to combine.
- Add 2 large eggs, one at a time, mixing thoroughly after each addition.
- Whisk together 2 cups of all-purpose flour, 1/2 teaspoon of cinnamon, 1 teaspoon of baking soda, and 1/4 teaspoon of salt in a separate bowl.
- Gradually add the dry ingredients to the wet mixture, mixing just until combined.
- Fold in 3 cups of quick oats until evenly distributed.
- Drop rounded tablespoons of dough onto prepared baking sheets, leaving space for spreading.
- Bake in the preheated oven for 10-12 minutes, or until lightly golden on the edges.
- Remove from the oven and allow cookies to cool completely on a wire rack.
- Beat together 3/4 cup of softened unsalted butter and 2 ounces of cream cheese until smooth in another bowl.
- Gradually add 3-4 cups of powdered sugar, 1 teaspoon of vanilla extract, and 1/4 teaspoon of salt. Mix until smooth, adding 1 tablespoon of cream if needed for spreading.
- Spread a generous portion of the frosting on the flat side of one cookie once the cookies are completely cooled.
- Top with another cookie, pressing down gently to create a sandwich.
