Description

A hearty and comforting dish that combines tender chicken with traditional Irish flavors, all cooked in one pot for easy cleanup.


Ingredients

  • 4 chicken thighs
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup potatoes, diced
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the chicken thighs and brown on both sides.
  3. Remove the chicken and set aside.
  4. Add the onion, carrots, and garlic to the pot and sauté until softened.
  5. Stir in the chicken broth, potatoes, thyme, and rosemary.
  6. Return the chicken to the pot, cover, and simmer for 30 minutes.
  7. Season with salt and pepper before serving.

Notes

  • For a richer flavor, use bone-in chicken thighs.
  • Feel free to add other vegetables like peas or green beans.
