- 4 chicken thighs
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 carrots, sliced

- 1 cup potatoes, diced

- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the chicken thighs and brown on both sides.
- Remove the chicken and set aside.
- Add the onion, carrots, and garlic to the pot and sauté until softened.
- Stir in the chicken broth, potatoes, thyme, and rosemary.
- Return the chicken to the pot, cover, and simmer for 30 minutes.
- Season with salt and pepper before serving.
