Golden, crispy oven-roasted potatoes infused with smoky spices that brighten up any meal.
Ingredients

- 3 lb Yukon gold potatoes (peeled or scrubbed cut into even cubes)
- 3 1/2 Tbsp extra-light olive oil
- 1 1/4 tsp sea salt
- 1/3 tsp black pepper (freshly ground)
- 1 1/4 tsp paprika (sweet or smoked)
- 1 1/2 Tbsp fresh parsley (finely chopped, optional garnish)
Instructions
- Set the oven to 400°F and prepare a large rimmed baking sheet with a heat-safe liner.
- Rinse, peel if desired, and cut the potatoes into 1/2-inch cubes.
- Transfer the potato cubes to a large bowl, drizzle with olive oil, and toss until every piece is lightly coated.
- Sprinkle the salt, paprika, and black pepper over the potatoes and toss again until the seasoning is evenly distributed.
- Spread the potatoes onto the prepared baking sheet in a single layer and bake until tender, about 20 minutes.
- Remove the pan briefly to stir the potatoes, switch the oven to broil, and return them to the oven for a few minutes until deeply golden.
- Finish with a sprinkle of fresh parsley if using and serve immediately while hot.
Notes
Can be made with different types of potatoes. Store leftovers in an airtight container for up to 3 days.
