- 1 head cauliflower, cut into florets
- 1/4 cup pesto
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 425°F (220°C).
- Combine the cauliflower florets, pesto, olive oil, salt, and pepper in a large bowl. Toss until the cauliflower is well coated.
- Spread the cauliflower mixture onto a baking sheet in a single layer.
- Roast in the preheated oven for 25-30 minutes, or until the cauliflower is tender and caramelized.
- Remove from the oven and sprinkle grated Parmesan cheese over the top.
- Return to the oven for an additional 5 minutes, until the cheese is melted and bubbly.
