Description

A delightful peach clafoutis that combines tender fruit with a light, airy batter; perfect for any gathering.

Ingredients

Scale
  • 6 peaches (halved and pit removed)
  • 3 large eggs
  • ⅓ cup granulated sugar
  • 1 cup whole milk
  • ¼ cup all-purpose flour
  • ¼ cup fine almond flour
  • ½ teaspoon vanilla extract
  • ¼ teaspoon sea salt
  • 2 tablespoons almond slivers
  • Unsalted butter (to grease the pan)
  • Powdered sugar (for dusting)

Instructions

  1. Preheat the oven to 375℉ and position your rack in the middle of the range.
  2. Coat your 10-inch cast iron or gratin dish generously with unsalted butter and set aside.
  3. Whisk the eggs with the sugar in a medium bowl of your KitchenAid stand mixer.
  4. Add the milk, and slowly add flour, vanilla, and salt. Whisk to combine well, ensuring no lumps form in the batter.
  5. Arrange the peach halves in a single layer in the pan or gratin dish.
  6. Pour the batter evenly around the peaches, then sprinkle with the almond slivers.
  7. Bake the clafoutis until it puffs up and is lightly golden brown around the edges, around 30 to 35 minutes.
  8. Place the skillet on a wire rack and let it cool off for about 10 minutes.
  9. Serve warm or at room temperature. Dust powdered sugar over the peaches and enjoy!

Notes

Use ripe peaches for the best flavor. Experiment with spices for added depth.
