- 2 cups fresh peaches, sliced
- 1/2 cup brown sugar
- 1/4 cup butter, melted
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup granulated sugar
- 1/2 cup buttermilk
- 1 tsp vanilla extract
- 1 large egg
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a muffin tin and set it aside.
- Melt the butter and mix it with the brown sugar in a bowl.
- Spoon the butter mixture evenly into each muffin tin cup.
- Arrange the sliced peaches on top of the butter mixture in each cup.
- Whisk together the flour, baking powder, baking soda, and salt in a separate bowl.
- Combine the granulated sugar, buttermilk, vanilla extract, and egg in another bowl.
- Add the dry ingredients to the wet ingredients and mix until just combined.
- Pour the batter evenly over the peaches in each muffin tin cup.
- Bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the cakes to cool in the pan for 10 minutes.
- Invert the muffin tin onto a serving platter to release the cakes.
