Ingredients

  • 1 cup sugar
  • 1 egg
  • 1/2 cup jelly or jam (your choice)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • Pinch of salt


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine peanut butter, sugar, egg, vanilla extract, baking soda, and salt in a mixing bowl.
  3. Mix until well combined.
  4. Scoop tablespoon-sized amounts of dough onto a baking sheet lined with parchment paper, leaving space between each cookie.
  5. Make a small indentation in the center of each cookie.
  6. Fill the indentation with a dollop of jelly or jam.
  7. Bake for about 10-12 minutes or until the edges are lightly golden.
  8. Let the cookies cool on the baking sheet for a few minutes.
  9. Transfer the cookies to a wire rack to cool completely.
