- 1 cup sugar
- 1 egg
- 1/2 cup jelly or jam (your choice)
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- Pinch of salt
Instructions
- Preheat the oven to 350°F (175°C).
- Combine peanut butter, sugar, egg, vanilla extract, baking soda, and salt in a mixing bowl.
- Mix until well combined.
- Scoop tablespoon-sized amounts of dough onto a baking sheet lined with parchment paper, leaving space between each cookie.
- Make a small indentation in the center of each cookie.
- Fill the indentation with a dollop of jelly or jam.
- Bake for about 10-12 minutes or until the edges are lightly golden.
- Let the cookies cool on the baking sheet for a few minutes.
- Transfer the cookies to a wire rack to cool completely.
Notes
For a thicker cookie, chill the dough for about 30 minutes before baking. Use sugar substitutes if watching sugar intake.
