- 2 ripe bananas
- 1 cup peanut butter
- 1 cup sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a muffin pan with cooking spray or line with paper liners.
- Mash the ripe bananas in a bowl until smooth.
- Mix the peanut butter, sugar, eggs, and vanilla extract in a separate large bowl. Stir until well combined.
- Add the mashed bananas to the peanut butter mixture and mix until incorporated.
- Sift together the baking soda, flour, and salt in another bowl.
- Gradually incorporate the dry mixture into the wet mixture, stirring just until combined.
- Spoon the batter into the prepared muffin pan, filling each cup about two-thirds full.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
Notes
Be careful not to overmix the batter to ensure a light and fluffy muffin.
