- 1 cup grated zucchini
- 1 cup peanut butter
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 cup all-purpose flour
- 1/2 cup chocolate chips
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C). Grease a loaf pan.
- Combine peanut butter, brown sugar, and granulated sugar in a mixing bowl. Mix until smooth.
- Add the eggs and vanilla extract, and mix well.
- Fold in the grated zucchini.
- Whisk together flour, baking soda, baking powder, and salt in another bowl. Gradually add to the wet mixture, stirring until combined.
- Fold in the chocolate chips.
- Pour the batter into the prepared loaf pan.
- Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
- Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
