- 1 cup peanut butter
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup marshmallow fluff or mini marshmallows
Instructions
- Preheat the oven to 350°F (175°C).
- Combine peanut butter, sugar, brown sugar, egg, vanilla extract, baking soda, and salt in a mixing bowl until well combined.
- Fold in marshmallow fluff or mini marshmallows gently.
- Scoop tablespoons of the dough onto a baking sheet lined with parchment paper, leaving space between each cookie.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
For thicker cookies, chill the dough for 30 minutes before baking and consider adding chocolate chips for extra flavor.
